Our Favorite Healthy Banana Muffin Recipe

Try this amazing banana muffin recipe using ancient grains and blue agave!

When everyone is home for the holidays, its nice to have something easy to grab in the morning. 

Banana Muffin Ingredients:
  • 1 ½ cups of Gary’s True Grit Einkorn Flour (There is also a Gluten-Free version!)
    • Don't have Gary's True Grit? We found this ancient Einkorn flour an excellent substitute as well!
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine Real Salt
  • 4 medium very ripe bananas, mashed
  • ¾ cup Blue Agave Sweetener
    • Young Living also makes Blue Agave Natural Sweetener (currently sold out)
    • In replace of Blue Agave, we also use Monk Fruit 
  • 1 tsp pure vanilla extract
  • 1 tbs ground flaxseed mixed with 3 tablespoons water (or use 1 egg)
  • 1/3 cup organic coconut oil, melted (plus a little more to grease the muffin tin if you’re not using paper liners)
  • chocolate chips (optional)
  • 1-2 drops Cinnamon Bark Vitality essential oil* (Optional) 
*100% pure, therapeutic-grade essential oil from Young Living Essential Oils ​

Banana Muffin Directions:
  1. Preheat oven to 350° F (175° C).
  2. Rub a standard muffin tin with melted coconut oil (or use paper liners).
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  4. In a large bowl, combine bananas, sugar, flax and water mixture, and melted coconut oil.
  5. Fold the flour mixture into the banana mixture and mix until smooth.
  6. Fold in chocolate chips if you choose.
  7. Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before removing from the pan.
  9. Enjoy!
